I'm on a recipe kick . . . trying to find those simple, quick recipes that we can all love! I've been trying to save a buck, shop more wisely, plan ahead, cook meals that will go farther and on and on. It's kind of been a fun challenge I've given myself. I don't have a picky husband and for the most part the kids aren't picky eaters either. Here's a few of my simple recipes . . . now I want yours!
Impossible Cheeseburger Pie
1 1b ground beef
1 c. chopped onion
1/2 tsp salt
1 c. shredded cheese
1/2 bisquick baking mix
1 c. milk
2 eggs
Heat oven to 400 degrees. Grease 9' pie plate. Cook ground beef and onion until browned. Stir in salt. Spread in pie plate and sprinkle with cheese (we sometimes add extra cheese). Stir remaining ingredients. Pour into pie plate. Bake 25 minutes or until knife comes out clean. I always make two pie plates and the kids devour them!
Taco Squares (Just tried this one this past week and everyone loved it! Thanks Tara!)
1 can refrigerated crescent rolls
1 lb. hamburger, browned and drained
1/2 package of taco seasoning
1 can (8oz) can tomato sauce
1/4 c. green pepper finely chopped
1/4 c. onion finely chopped
1 c. shredded cheese
Place 1/2 can crescent rolls flat in bottom of small square pan, press seams together. Bake at 350 for 8-9 minutes or until browned. Meanwhile, combine remainder of ingredients, except for cheese, in pan on stove until heated through. When crescent roll crust comes out, add meat mixture to square pan and sprinkle cheese over it. Lay out the rest of the crescent rolls on top, pressing the seams together. Bake an additional 35 minutes. Garnish with sour cream, salsa, lettuce and tomatoes if you wish. You can easily double this for a 9 x 13 pan!
Easy Chicken Pot Pie
1 2/3 c. frozen mixed veggies (thawed)
1 c. cut up cooked chicken or can chicken
1 c. cream of chicken soup
1 c. bisquick mix
1/2 c. milk
1 egg
Heat oven to 400. Mix veggies, chicken, and soup in ungreased pie pan. Stir other ingredients and pour into pie plate. Bake 30 minutes. I always make two of these at a time two. They are good left over.
