Simple Snack

2 ingredients and you have a yummy snack.
Nutella and Crescent Rolls

If you don't know what nutella is you find it by the peanut butter and it's like a chocolate spread.  
I've never really cared for it but people that do go ON and ON about how good it is.
While Jas and I were in college we traveled Europe with a class for a month and it was a daily thing to buy a fresh loaf of bread and nutella and to eat it on the steps of a cathedral.  Good times!
That's what I think of when I think of Nutella.
This is the first time I had ever boughten it since then.

Back to the recipe.
Spread the nutella onto the crescent roll and then roll them up.
Bake them according to the crescent roll directions.
So simple and 3 of the 4 kids loved them - Jas did too.
For a non-nutella lover I even ate two of them.

I must apologize to the person who came up with recipe because it was months ago when I saw it on someones blog, and for the life of me can't remember who now.  If you are reading this, forgive me and let me know it was you.  Thanks for the delicious snack.

Just for the record . . . after yesterday's post I feel I should say Tatum does not dress herself for all of our outings. I pick my battles . . . our place? - Dress up girl. - Grandma's? - Sure why not. - The field to see daddy? - Absolutely. - Shopping with me/ school activities / restaurants??? - I'll help you just a little in your deciding sweet Girl! I've come a long ways since kid 1. Again - just for the record.

Peach Strawberry Pie

Yesterday was sort of a big day around here.
Twins started going all day to kindergarten. Up until now they have been coming home for lunch.
We missed them.
Jason started year two of seminary yesterday too.
As I typed this last night he was sitting across from me deep in big books that looked boring and drinking coffee.
I went to bed after posting this . . . he did not.
I wasn't really looking forward to the day.
To be real honest I was pretty grumpy about it coming.
But the day was good.
I made a special dinner and some yummy PEACH STRAWBERRY pie to mark the day.
I RARELY make pies, like only at Thanksgiving or something, but when I saw this pie I had to make it.
I found the recipe at Preppy Pink Crocodile.
It was very easy to make and OH SO GOOD! ! ! !
Wish I could share it with you but these pics will have to do!
The fruit is supposed to show - Preppy Pink called it a "rustic galette".
Not quite sure what that means but she said it didn't have to be perfect and that is my kind of baking.

Problem??

I have 3 different posts to share about Carter and Coleson's 6th birthday celebrations.
I'll start with the one that cracks me up the most.
They had school on their actual birthday - it was the third day of Kindergarten.
They were able to bring snacks and had decided on cupcakes.
They wanted something ON the cupcake that each kid could keep.
We went looking in the party toy aisle at Walmart for an idea.
They found a bag of army men and one of them said we could do cupcakes with all army colors.
What a great idea!
Remember the rainbow cupcakes?

We did them again on the fourth of July using just red, white, and blue.
So this time I bought food coloring in the cake decorating aisle in little containers.
We got green/ brown/ and black.
They turned out so cute.
Believe it or not I FORGOT to take pictures until their was only one left that had not been frosted and someone had already taken a bite of it.
I quickly took a picture to give you the idea. Some had more of a swirl or mix of color than others.

So the night before school I made 25+ camo cupcakes, frosted them with the pre packaged swirl icing that was black and green and lovingly put army men on top of them.
I stepped back to look at them and then thought, "Crap, what was I thinking? I'm about to send a bunch of guns to school."
Can you do that?
I've seen the moms on the TODAY show that are being used as an "example" by the school board to make sure we all know the no tolerance rules are serious.
I taught school before and the no tolerance rules for bullying/violence/safety are serious.
They serve a great purpose.
I would love to go to New York but I do not have time for interviews and the such for why I sent plastic guns to school.
We've drilled it into our boys that weapons of any sort can't be taken to school - not even for show and tell.
Remember the kindergarten boy that took his camping eating utensil to school??
They wanted to ship him off to a juvenile school for the rest of the year.
Now what?
I mean they aren't real but still.
I asked Jason what he thought.
He didn't know but thought it would be ok.
He asked if I should call their teacher and ask.
My reply to that was, "NO! What if she says no and then what? I have to go to the store and start all over?"
I called my mom.
She worked at a school for years in the office too.
We decided it would probably be ok.
Ian saw them and thought they were so cool.
I asked him if he thought it was ok to take plastic guns to school.
He said, "I don't know. (little nervous laugh) I hope so."
So I did what seemed to make the most sense.
In the morning I sent Jason to school to deliver the cupcakes.
He was heading that way anyways. :) )
I figured if the teacher saw them and rejected them he could handle it. HA!
He's such a great team player.
No rejection occurred.
No phone call from the Super Intendent.
No trip scheduled to New York.
The container came home empty and I heard from several mommas that their kids loved them - plastic guns and all!

Get creative with the rainbow cupcakes . . . holiday colors, team sports colors, kids favorite colors . . . . ideas are endless.

Summer Slush, Gonna Do This and Other Things

The Countdown is ON.
Can't stop it!
6 days till that big yellow bus comes to my house and takes off with my boys!

We're gonna live it up till the alarm goes off on that morning.
This week I made some SUMMER SLUSH!
My mom used to make it for us in the summer and I stumbled on the recipe when I was looking for something else.
I was almost giddy to make it.
I took one bite, shut my eyes, and told the kids when I taste this I can almost feel myself sitting on the hot Houston cement at 5510 #@**#@^ street next to my brother eating slush! Oh so good!
Make yourself some!

SUMMER SLUSH RECIPE
1/2 cup sugar
1 package flavored gelatin (any flavor - we used strawberry banana)
3/4 cup boiling water
3 cups pineapple juice
1/4 cup any kind of frozen fruit

Boil the water and combine sugar, gelatin and water. Stir until it's all dissolved.
Pour in the Pineapple Juice and fruit.
Freeze for 24 hours.
Scoop out into cups and enjoy!

I didn't do the fruit because I didn't remember any fruit pieces in the one my mom made.
I'd double or triple this recipe. 
It works good in a gallon ice cream bucket.


A friend of mine did this yesterday on her blog. She got the idea from here. I'm SO doing this next month - unless of course I forget by then. Love the idea.  It goes so well with my thinking over the last year of my life . . . finding the goodness in the ordinary.

I'm also warning you that I have a list, yes I wrote it out, of all the projects I want to start ticking away at when my precious twins leave me for the school year.  And yes many of them involve paint. I've had the painting bug for awhile. I need to create and I need some color!!!

We  are  Jason is currently painting the house - little each day - and Carter came up to him this week and asked a very good question, "Daddy why don't we leave anything white?"

Last night I took the twins on their "I'm going to kindergarten school shopping/date".  I did it with Ian before he went to kindergarten.  It was fun, different with two but still fun.  I somehow managed to work things so they didn't choose McDonald's!  They each picked a cheapo toy out at the store so then they said, "Now we don't have to eat somewhere that gives us a toy."  Good thinking guys!





Whenever they want to do silly pics I always stick my tongue out.  
What's up with that? Can't I think of anything else to do? Weird.

Smores, Rainbow Cupcakes and Missing My Boy

While Ian was at camp the rest of us had to keep busy and have some of our own fun.
We did smores over the campfire.



















Tatum told us a scary story.

Then yesterday I FINALLY made rainbow cupcakes.
I'm sure you've seen the rainbow cakes on several great blogs.
I saw mini rainbow cupcakes in the Simple Living Magazine the other day and decided it needed to be done.
The kids loved it.
It was a like a science experiment to them.
I let them each mix a color and then they each put scoops of their color into the muffin tin.
It was messy.
After one pan of regular size cupcakes that was plenty of fun!!
I finished making the mini cupcakes.
The COLOR was amazing.
It looked like playdoh.
I didn't even put frosting on them at first.
We pulled out some frosting later but I didn't want to hide the crazy color!
It was color happiness!
We'll be making these again for sure.

Rainbow Cupcake Recipe

Any box of white cake mix (I used 2 boxes) - follow the box directions - divide the batter up into 6 bowls- mix the different colors (red, orange, yellow, green, blue, purple) - spray the pan WELL (don't use cupcake liners or you'll miss out on seeing the great smooth colors - put spoonfuls of the batter into the cupcake pan - bake as directed

We've had a good time while Ian has been at camp.
It's good to have time with just the three younger ones.
They play like triplets when it's just the three of them.
But Ian hasn't been far from our minds.
While doing smores Tatum said "I wish Ian was here."
We all wonder what fun he's been having!
Later today we'll pick him up, bring him home and share some of our color yumminess with him!

Sharing

Here's some little unimportant information about me . . .
I'm not much of a dessert/sweet girl.
Chocolate never has been my downfall (except for one or two days out of the month).
Passing on dessert usually isn't that difficult.
As a kid my choice of birthday cake was a plain angel food cake with frozen strawberries.
The poor kids I invited to my parties sure must have been disappointed!
I cave and go crazy over things like chips and salsa or cheese and crackers.
HOWEVER,
With each pregnancy I noticed a stronger desire for sweets.
I was shocked after the twins were born and people would bring us meals (we got meals for MONTHS, it was AWESOME!! Many of you reading this probably brought us a meal . . .thank you thank you thank you) and I would find myself digging into the desert and being so excited each night to have another delicious dessert to snack on.
It just wasn't me.
I had never cared about the desert before.
Crazy I know but it's true.
Things that used to be easy to stare in the face and without hesitation say no to now catch my eye.
I guess you could say each one of my darlings made me a little bit sweeter!

Today on two blogs I follow regularly they both posted recipes that sound AMAZING.
Both super sweet recipes; I found my mouth watering as I read through them.
I thought I'd share some of that mouth watering goodness with you.

MONTHLY SHOPPING

I've made many references on my blog to my monthly grocery shopping.
I've had over a dozen or more of you ask me questions and want to know more.
I've said each time that I'll do a post on it sometime with some more of the details.
I've finally done it.
In addition to answering your questions I have a gift just for YOU!
My APRIL MEAL LIST and my GROCERY LIST for this meal list.
You can use it, slice it, dice it, delete it, save it for another day, whatever!
I'm going to do this post in a question/answer format because this is really lengthy.  I've tried to remember all your questions.

How long have you been doing this and why did you start?
== I started after the twins were born. I didn't have a real system then and I  didn't do all of it but that was the beginning for me.  I started to enjoy my quiet times in the store without kids.  It became a time for me; time in the store without two babies and a toddler. You can only stuff so many groceries around twins in a double stroller. If I did the massive shopping alone then when I did take the twins it was doable and fun for them and me.  Many times I made a day of the whole thing and did my hair appointment etc.  After Tatum was born I got very serious with it. Our finances got tighter and tighter when we moved to Utah. The cost of living was higher and we had added a number to our family.  I wasn't ready to go back to work and I knew we had to cut back on our spending. You can only cut so many bills out so we tried to change what we could.  It became a personal challenge for me. How can I shop more efficiently and save money. So I've been doing it with this system for 2 years now. When Jason was laid off over a year ago, I was SO thankful I had this system down.
== Here's the thing with budgeting- especially if you have a tight budget. If I shop right away at the beginning of the month then I'm prepared and I don't have to worry all month if I'm going to have enough money for meals each week. That bill is checked off before all others almost.  I know my family will eat and have what we need. I think that priority comes near the top when we do the budget. The rest is negotiable.
==I've never kept it up in the summer. I get in a groove in September and have always gone through May.  Summers were crazy with vacations so I didn't want to spend such a large chunk of the budget on food and then us be gone.  This summer I'm hoping to keep it going. We'll see how it goes.

How much do you think you save by doing this?
$200-$400
When I got real serious with this 2 years ago it immediately dropped us down $200. Since then we've got it down another $100 or more.
The savings comes in several ways.
You aren't in the store as often so you don't put other things in the cart that you don't need and when you do go in for things your list is short so you aren't in there as long.
You also aren't keeping every item stocked all the time.
When I used to shop I'd see noodles and think 'I just used the last box of noodles I need more'.  Well I didn't need the noodles for the rest of that month so in that monthly budget cycle I just bought something I didn't need. Make sense? I quit buying things that we were just low on! Unless we are out and we really need it I wait till next month's budget.
If any of you want to talk specifics in terms of dollars email me I'd be happy to share.

How long does it take?
==The meal list takes about 30 minutes. When I see a new recipe I want to try or come across one I haven't made in a while I set it in a pile to look through when I sit down to do the meal list. If there were any meals from the previous month I didn't make I automatically put them on the list. I usually come up with the first 12 meals easily and then I get stuck.  Sometimes I then look through some blogs or my recipe books looking for some inspiration to finish the list. On the menu I like to have several crock pot recipes and several EASY things.
== The shopping list takes 45 minutes or so. I go down the meal list and write what I need on the list, stopping to check to see if I already have some of the ingredients. After I go through the meal list then I write down the items I need for things that aren't on the meal list. Lunch foods, snack foods, paper products, household cleaning products etc. I also double check the calendar for events or things coming up.
==The shopping part takes around 3 hours give or take.  I do the food part in an hour  to an hour and a half but then depending on the "other" catagory it can then take another hour and a half.  This month I had Easter stuff to look for and decide on so that took longer. Most months there is something . . . . cards, birthdays, holidays, picking out a new bodywash, etc.
==Putting things away takes an hour. This is the hardest part because you are DONE and yet the work isn't over. If my kids are home it's movie time or Jason has to occupy them because I don't keep all the food out for all to see or it wouldn't make it for the month.  I give them a snack and shoo them out of the kitchen. Many times I shop at night or when they are at school and Tatum is with a sitter.

Where do you shop?
==Right now, I do all my shopping at Walmart.
== In Utah I went to Costco for a few select items and then I shopped Smiths sales and then the rest at Walmart.

What is your process at the store?
==First of all .  . . this is a NO KIDS trip for me.  I have broken that rule twice and taken Tatum and to my surprise it did go well.  Bought a few extras but it worked. This isn't just a normal trip to the store. My kids come on those trips all the time. This may sound crazy but it's my time. Some months it is just a task that needs to be done but most months I enjoy it once I get there. It's me and my list. Crossing things off a list feels good. I have a spiral notebook I use so I can flip back to the previous menus and lists for ideas. This is a big part of my "job" as mom and I figure we don't send the kids along with Jason on big jobs so why would we do that to me??  Thankfully, Jason really agrees with me.
==I always start off with a purchase of Dr. Pepper - need a shot of caffeine.
==I've then shopped two different ways . . . I've filled one cart, taken it to the front by a register and asked if I can leave it there till I'm done OR (this is the one I do now) I fill one cart, pay for it, take it to the van and then go again.  It takes two FULL carts. Cereal, toliet paper etc fills a cart quick.
I typically do all food first and then on the second trip do paper products, cleaning products, chips, cereal and anything else that's real bulky.  It can be like the video game Tetris at times!
== I will warn you . . . . get ready for comments.  Usually it's made by some guy that is in there getting one item that his wife sent him to the store to get.  This last time a guy said, "Wow, now that is a lot of groceries." He just looked at me wanting a response.  I laughed and said, "Yes it is, I buy for the month."
For me it's kind of like the "Are they twins?" comment. You just get used to it and you have a standard response.  I should start adding to my response, "This is just half of it."  I don't think most people know what a month of groceries for 6 people looks like.  You are going to buy that (and probably more) whether you do it all at once or not.  The register ladies always comment too but usually you get into a conversation with them and they are all curious about it.
==The time you go and the clerk you choose is important.  In Utah I went on Sunday evenings because the stores were empty.  Evenings are good too. Mid mornings might be busier with people but they have more clerks then too so it works out good.

Do you assign a meal to specific day and how many meals do you plan?
== Depending on the activities of the month (Jason being out of town, company coming, short month etc) I plan between 17-20 evening meals. We eat at church one night a week and we eat out on Sundays and then we usually have a couple left over nights. We also eat differently on weekends, sometimes we eat out or we eat simple stuff like frozen pizzas or something that I would have for lunches.  I don't attach sides to every meal either.  There are certain things I do, like Enchiladas for example I make spanish rice with it.  On my menu list I have a short list with several sides that can go with anything.  We all like lettuce/salad so we do that as a side a lot and all the kids love bisquits and crescent rolls ect. so that's another we do a lot of.  I typically make the main course and one side, sometimes two but with the ages of my kids the main thing and a side is perfect. They eat more of the main thing then.  The day will come where I'll have to have many sides to fill my boys up.
== Unless it's an event or company is planned I don't assign meals to dates. I have a weekly calendar on the fridge and I will write down several meals for the week on the first column and then throughout the week I'll just pick something from the list. If I know we have a lot going on a particular day I make sure to pick a crock pot meal. Things like that. I don't lock myself into anything.

Where do you store it all?
==We do have a second fridge/freezer that we have moved with us.  It can all fit in one fridge though but that would make it more difficult.  I put things in the second fridge that I don't want the kids to just help themselves too. Danimals, gogurts things like that.  They could empty a box of those things in minutes.
==The other items that I store away are cereals and boxed snacks or cracker things.  Then each week I pull a few things out.  I have a computer paper size box on the top shelf of my pantry with the boxes in it.  Chips are hard to store but I just moved things around and found space, again where the kids don't get them.  You do have to work at rationalizing things out because if it's all in view, even for us adults, it goes so much quicker.

What about the things that don't last all month?
==We have a set amount for the month. I spend the majority of it right away. Then with what is left I pull out cash from the bank.  I try to divide it up for the next three weeks.  Milk, fruit, and fresh vegetables are the only things I have to keep buying.  Obviously there are times also where I forget something or we make special plans or I have to bring something to an event.  I do work in a couple desserts on the menu so if I have to bring something to an event I usually have a few things, especially if it's in the first half of the month.

Do you use coupons?
==Rarely. When I find them on boxes or things I've purchased I do. Or when my mom gives me some I use them.
==I've never been good at coupons. I've tried; I did try the price matching at Walmart too with ads from other stores.  That was a lot of work to keep it all straight but it did work.  When I was trying to use coupons I ended up buying things because I had a coupon not because we needed it.  I've looked at a few websites but honestly they confuse me and when I've tried I just get frustrated trying to figure them out. I haven't ever wanted to pay a monthly fee for any coupon site either.
== I do think they work and I keep thinking I should try again, if I could add this to my system I could save another $100 I'm sure. If any of you know have ideas for coupons I'd love them.  

How can I alter this for my budget circumstance?
=Other than the season right after Jason was laid off we have always been paid monthly. So this works for us. I shop ON or close to the first day of the month. The fridge is BARE on the 30th.  Makes cleaning your fridge easy.
= If you get paid twice a month I would do two shopping trips and cut your meal list in half. You would have to experiment with it. I also know of people that do it week by week. I think you still save a TON this way because you are prepapred and planning but your greatest savings comes when you aren't even in the stores.
==A benefit to shopping weekly or bi-weekly is you can shop the ads and weekly sales at local stores (if you don't do Walmart.)
= Bottom line is you have to do what works for your family, your budget, your time, and your personality.  It will only work if it fits for YOU!

4 Yummy Recipes

Pudding in an Ice Cream Cone 
(Simple, Healthy, and Yummy)
Make pudding.
Scoop it in a cone.
Put sprinkles on it.
My kids loved this after school snack.  
I didn't do sprinkles, figured they didn't know it was an option but maybe next time.
This recipe was from a Family Fun magazine.

This next one is from my sister in law Lisa. 
Had it at her place and just had to have the recipe. 

Nutty Ramen Salad

Combine 4 TBL sesame seeds, 1 Cup slivered almonds (toasted 10-15 min. 350 degrees)--watch these they burn easily, 1/2 Cup sunflower seeds, head of cabbage, finely chopped, 2 pkgs of chicken ramen noodles,  4 green onions, finely chopped.

Dressing:
4 TBL sugar
6 TBL vinegar
1/4 Cup oil
1 tsp salt
1/2 tsp pepper
2 flavor packets from the chicken ramen
(I mixed mine in a salad dressing shaker.)


I've made it now three times and everytime it's SO good. 
Only one kid likes it but that's ok, more for Jason and I.
I have altered it some based on things I had at home.
I used a bag of shredded lettuce instead of a head of cabbage. Still tasted GREAT!
I also didn't brown my almonds, I bought "Almond Accents - Original Oven Roasted Flavored Sliced Almonds".  Tasted Great.

This next one I got from a Family Fun Magazine years ago and finally made it this past month.
OH SO GOOD!! My mom was here and said they looked like they came from a pastry shop. I didn't know the name of them so I named them "Pastry Shapes".

Pastry Shapes
Heat Oven to 375 degrees.
Whisk on egg with a teaspoon of water and set it aside.
On floured surface rolll out a prepared pie crust so it's about 1/8 inch thick.  
I use Pillsbury Pie Crusts, you could make your own too.


Use a large cookie cutter shape (I used hearts for V-day, the recipe is for a leaf for Fall) and cut as many pairs as possible from the dough.
For each pocket spread about 4 teaspoons of mini chocolate chips and peanut butter chips on leaf.
(I didn't measure, just did a small handful.)
Brush the egg wash on the edge, place the matching shape on top, and press the edges to seal.  
Brush the top with egg wash and sprinkle it generously with raw sugar.
I added cinnamon to it also!!!!
Bake them on parchment paper on a cookie sheet until their edges are beginning to brown, about 12-15 minutes.
(I baked a little longer b/c I liked them crisp.)

This recipe can have several changes to it too. You could add a variety of things in the center instead of chocolate chips . . . marshmellows, pie filling etc. I'm going to make it this month with blueberry pie filling.

The last recipe is a new way of making an everyday meal. I got this from a blog but I can't seem to find where now. 

GRILLED CHEESE ALL AT ONCE
Instead of trying to keep the grill cheese sandwiches coming you can bake them all at once.
Make sandwiches like normal and bake all at once on a cookies sheet for 7 minutes per side at 425degrees.  They don't look at browned and the crust is crispier but they taste just as good.

Last Minute Halloween Treats

Need a last minute Halloween treat for tonight or tomorrow!!
Make these up for after your trick or treating fun!
SPIDER COOKIES (Came from Family Fun Website)
Ritz Crackers, peanut butter (or cheese whiz), pretzels, chocolate chips (or raisins)
Peanut butter or cheese on both ritz crackers, lay 8 pretzels in the peanut butter, put the other ritz cracker on the top. Chocolate chips or raisin for eyes using peanut butter to stick.


I made these for the twins class on Thursday and they loved them! Fun and simple.

PUMPKIN CAKE
I haven't made this yet, I'm going to make it tomorrow. You should too.
My mom found the recipe in a magazine and told me about it.
Any Cake Mix, Bundt pan, orange frosting, and an ice cream cone
Make the cake as directed in a bundt pan. Be sure to grease and flour your pan.
Turn in upside down and take out of pan.
Stick the ice cream cone upside down in the middle of the cake opening.
Frost it.
Wah - la!  Pumpkin!

Let's COOK!

RECIPES
Is it just me or does school bring you more structure?
I got back to my month long meal planning and shopping!
It's a big undertaking for a day or two but I find we save so much in our food budget this way (mainly becuse it keeps me out of the store so many times a month) and for the most part I'm ready for the month!! Whenever I find a good recipe I like I just stick it aside in a pile for the day when I'm planning out the month.  I don't plan what we'll eat on what day - I'm not that insane, I just plan for x amount of meals and then I pick from that list knowing I have what I need for it. The meals range from hamburger helper to spaghetti to new recipes!! You have to allow for days when you don't want to really cook - I have lots of those days!!

Back to the topic -- RECIPES -- here's a few new recipes I tried this month that were a real success! I got a few pics or some of them.

ITALIAN SAUSAGE AND PENNE (CROCKPOT RECIPE)
3/4 lb italian sausage links, cut into bite size (you can use any type)
(I didn't measure my amount of sausage, just put a bunch in)
1 red pepper
1/2 onion chopped
26 oz. jar spaghetti sauce
6 oz. penne pasta - cooked (I used the whole grain kind)

Stir everything together in the crockpot except the pasta.
Cook on low for 7-8 hours. At serving time stir in cooked pasta.
 VERY DELCIOUS and something different from hamburger and chicken recipes.

CROCKPOT CHICKEN W/BLACK BEANS
4-5 chicken breasts, boneless
1 can black beans
1 can corn
1 jar salsa
1 pkg cream cheese
Put frozen chicken, beans (drained), corn (drained), and salsa in crock pot on
HIGH for 4-5 hours or until chicken is cooked.
Add cream cheese and let sit for 1/2 hour!
It was great with rice and chips!

Double Peanut Butter Candy Bites
1 pkg refrigerated penut butter cookie dough (24 inch balls)
24 miniature reeses peanut butter cups
m&m's

Place 1 inch cookie dough ball in greased miniature muffin pan.
Bake 15-18 minutes or until edges are lightly browned.
As soon as you remove from oven press the  reeses pb cups into the dough.
Then put 3 m&m's on top.

You could do these with any kind of store bought or home made cookie dough and you could use m&m's or the recipe also suggested granola.  You could try a carmel square in the center too. Options are endless. My kids LOVED these! Kids can help easily with these too.




CREAM CHEESE CHICKEN CRESCENT ROLLS

2 cups cooked chicken shredded or cut really small
1 pkg cream cheese 8oz.
jumbo crescent rolls (12-18)

Mix filling together (can freeze this).
If frozen thaw completly.
Roll crescent rolls out flat, put in spoonfull of mixture, roll up and pinch ends so it's all covered.
Brush melted butter on top.
Bake 350 for 20-30 minutes.

I added to this recipe . . . garlic seasoning, and onion salt. I may add celery or some type of nut next time for some crunch. We all liked these! They were great for Jason out on the tractor . . . he liked them hot or cold.

Tatum enjoyed "painting" on butter!

When in Rome

You've heard the phrase . . . "When in Rome do as the Romans do."
I'm not in Rome but I somewhat embrace that philosophy!
(You can try anything at least once and create an experience!)
This week I did a lot of things I don't usually do . . .
Froze Peaches,
Canned Pears,
Froze Corn on the cob,
Froze sweet corn,
and
Made Verinika (it's a German thing).


I had actually frozen peaches years ago . . . it's not hard and oh they are so good!!

Simple Peach Freezing Recipe
Boil water, put the ripe peaches in the boiling water for 1-2 minutes
Put them in a big bowl or pan to cool for few minutes.
Then with hands peel off the skin, by boiling them the skin should come off nice and easy.
Then cut the peaches up in slices.
(You can keep more peaches boiling and cooling while you keep working.)
For every 4 cups of sliced peaches you mix in 2/3rds cup of sugar and 1 tsp. of fruit fresh!
Mix it up and put it in bags or containers.
Good for cobblers, pies, or just a bowl of sweet peaches!

We did sweet corn the third day we were here.
When the corns ready I guess you have to be ready!
I had only gotten in on this one other time since knowing Jason's fam! Usually we come for Harvest and that's a whole different thing.

Then we froze corn on the cob too!!
I'd never canned before . . .it's quite the process! I just did what my mother in law said. I thought it would take a few hours and I'd be home before the bus came . . . change of plans . . . the kids and I ate dinner at Grandma's!

Then we joined the ladies at church for Verinika making. It's a yummy German food that they make tons of for the Arts and Crafts Fair in Kansas.
It was fun and we even took some home with us that morning.

We are stocked for the winter now!!
Maybe I can entice you to come visit???
Our last visitors left with a bag of frozen corn on the cob!!
You can even have your pick, we'll grill it, cook it, or just eat the regular sweet corn!
